Our fish smoking systems have been developed especially for this treatment, air circulation and fresh-exhaust air are specially designed for this product group. This is very important for hot smoking, cold smoking and drying processes, because fish shows a totally different diffusion velocity than meat or sausage products. With NESS chambers you meet these requirements and you can treat your products fast, consistent and with little loss. Thus, you ensure key advantages in competition.

NESS is the sole manufacturer of fish smoking and drying plants, including the
Circo-Dry-System® for use with its new generation of UNIGAR fish processing plants,
from the one-trolley chamber upwards.

In these plants it is possible to treat either whole hanging fish such as trout, salmon,
mackerel, herrings etc, or filleted fish such as above equally well and in a
uniform manner. Together with optimised circulation of the processing air around
the product in question, NESS equipment includes the Circo-Dry-System® for drying,
from the one-trolley chamber upwards. By dehumidification of a part of the processing
air flow outside the main chamber in a specially designed dehumidifier, the circulating
air can be set as accurately as possible to the desired humidity and temperature.

The advantages of our plant are:

  • Reduction in the processing time for all products of up to 50% of the time previously spent on drying and smoking.

  • Energy saving at all processing stages by effectively process control and the use of the Circo-Smoke-System®, developed by us and used alongside the above.

  • Reduction of weight losses by optimised programming and accurate humidity control.

  • Uniform drying and smoking of hanging and filleted processed products, using the optimum air induction into the chamber with the air guide vanes installed, and an alternating damper, which makes it possible to change horizontal air-flows from left to right over the product on the smoke trolley.

  • When smoking and drying using the Circo-Dry-System®, which incorporates using cooling equipment, the chambers are closed to the outside air.
    This means that the fresh air inlet and exhaust outlet are only open for a few minutes during the entire process, to replace the used air in the chamber, so odour emission to the atmosphere is therefore kept to an absolute minimum.
    With this closed system we are able each time to produce a uniform and consistent product, using the same program each time, irrespective of the outside temperature, polluted air or humidity levels.

  • The system can be combined with all known smoking processes such as saw dust smoke, friction smoke or liquid smoke and by using our Circo-Smoke-System® the system is environment-friendly.

  • Modern, user-friendly micro-processor controls, which fulfil all trade and industrial requirements.

  • Connection possibility for up to 24 chambers to the NESS view system, for monitoring of the entire production process onto a PC, with full HACCP conformity and program administration.
